About
Edonia is a Paris-based FoodTech startup founded in 2023 that supplies ready-to-eat protein ingredients made from microalgae to foodservice operators and food manufacturers. Its patented Edonization process, developed with AgroParisTech Innovation, cooks spirulina in oil at a controlled temperature to turn it into Edo, a tender, umami-tasting whole-food protein grain with two ingredients. Hugo Valentin is CEO. In October 2026 Edonia raised €15 million led by SWEN Blue Ocean 2, Asterion Ventures, EIT Food and Bpifrance to scale production and supply manufacturers and foodservice operators across Europe, Japan and the US; the company says it has more than €30 million in pre-contracted revenue.
